DESCRIPTION:A sourdough starter is a treasured part of many bakers’ kitchens and the first step in baking delicious artisan bread. In this fun workshop\, you will learn everything there is to know about creating\, growing and feeding your own sourdough starter. Our baking expert Fabrizio will explain what makes sourdough bread different from yeast bread\, how to keep a healthy sourdough starter alive and how to use it for making bread at home. Even better\, you will get to take your own starter home! Make sure to bring a 17 oz clean jar for your starter. The workshop will start at 6:30 PM and last about an hour and a half. \nFabrizio  Busso was born in Savigliano\, a small city in the north of Italy. He started his career in the food and beverage field when he was just 17 years old. First Bartender\, then Professional Baker and last Maestro Gelatiere\, Fabrizio built his knowledge day by day in his own business in Italy and taking part to a lot of competitions. He loves to share his passion with happy people who would like to improve their skills or just enjoy an “Italian Experience”.

DESCRIPTION:Join Chef Karen McAthy\, founder of Blue Heron\, and author of The Art of Plant-based Cheesemaking in learning how to make cultured\, fresh\, vegan cheese! This three class course (held over three days)\, is homework driven\, focused on getting students to make their own vegan cheeses from growing cultures to easy aging techniques! \nStudents will learn : \nAbout lacto-fermentation and culturing (differences\, how it works\, etc)\nThe role of microbes in creating flavor and texture in plant-based cheesemaking\nThe difference between cultured and non-cultured plant-based cheeses\, and the in-between\nHow to start and grow some key plant-based lactic acid cultures safe for use at home\nHow to choose a plant based medium for cheese making and what to think about when choosing\n3 base/core cheese recipes\nBasic aging method for at home plant-based cheesemaking\nReview of key equipment\, variables affecting cheesemaking\, historical context of cheesemaking as a practice\nThe course is homework driven\, with lecture/demo component. Students are asked to bring their ‘assignments’ back to the second and third classes for review\, discussion and comparison. \nStudents are asked to bring a notebook. \nKey starter cultures are included in the course price\, and a Blue Heron Cheese tasting concludes the last day of the course. For 2018\, Donnelly Group has partnered with Postmark Brewing to exclusively offer their limited-edition Postmark Kölsch\, the first beer of this style that they have ever brewed. Donnelly Group will be donating $1 from every Postmark Kölsch sold to the Greater Vancouver Food Bank\, on behalf of the Donnelly Fund. \nAs you might guess from the name\, Kölsch is a German beer style which was developed in Cologne (Köln) and first brewed in the early 1900s. This hybrid style sometimes referred to as a “lagered ale” combines the clearness and clean flavour of a lager with additional hops and malty flavours when compared to a traditional lager. Postmark’s Kölsch comes in at 4.8% ABV with a mild bitterness of 20 ibu.  This delicious\, sessionable beer will only be found at Donnelly Group pubs. \nThe Food Bank of Greater Vancouver is one of Donnelly Group’s key charitable partners\, through its foundation the Donnelly Fund.
