After nearly 40 years of delighting Vancouver diners, the legacy of SalaThai continues with the launch of Jay Nok Modern Thai, a fresh, vibrant take on Thailand’s street food culture. Opening in early 2025 at 127 W 2nd Avenue in Olympic Village, Jay Nok celebrates both tradition and innovation, offering a shared dining experience inspired by Bangkok’s bustling markets.
The opening follows a special recognition in October 2024, when Sam and Joy Kongsilp were honored as “Industry Pioneers” by the BC Restaurant Hall of Fame. “Jay Nok reflects the same family values as SalaThai but with a modern twist,” says Joy Kongsilp. “I’m excited to see the next generation bring our vision to life.”
At the helm of the kitchen is Executive Chef Bumpen “Jay Nok” Khangrang, whose expertise blends authentic Thai flavors with contemporary presentation. With General Manager Bobby Kongsilp and Project Manager Margarita Virata Santos, the team ensures a seamless experience for every guest.
Jay Nok’s menu is a tribute to Thailand’s four regional cuisines, featuring shareable plates that evoke the joy of communal dining. During the day, the atmosphere is bright and fast-casual, mirroring Bangkok’s lively streets, while at night, it transforms into a glowing social haven with eclectic decor, beats, and a cocktail lounge.
