After a milestone 20th anniversary, Chambar is charting a bold new course with the appointment of Co-Wine Directors Alex Catto and Aimbree Bystrom. To celebrate, the acclaimed restaurant will host an exclusive Clos du Soleil Winemaker’s Dinner on March 12, in partnership with alumni UBC.
Alex Catto, originally from Somerset, England, brings international expertise, having worked in New Zealand, Melbourne, and at Vancouver’s Hawksworth Restaurant before joining Chambar. Aimbree Bystrom, an Alberta native, discovered her passion for wine through family traditions and storytelling, rising quickly within Chambar’s team. Together, they aim to elevate the restaurant’s dynamic wine program.
Their debut event, the Chambar x Clos du Soleil Winemaker’s Dinner, promises an unforgettable evening of fine wine and exquisite cuisine. Guests will enjoy a four-course long-table dinner paired with five wines from Clos du Soleil, one of B.C.’s most esteemed artisanal wineries. Winemaker and UBC alumnus Michael Clark will co-host, offering insights into the terroir-driven wines of the Similkameen Valley’s Upper Bench.
The menu, crafted to complement Clos du Soleil’s portfolio, features pan-seared scallop with crispy pork jowl and a sage and yogurt ice cream with caramelized seeds, among other delights. Signature pours include the 2020 Signature and the 2022 Saturn Late Harvest.
“This marks a new chapter for Chambar,” says Co-Owner Nico Schuermans. “With Alex and Aimbree leading our wine program, and exciting collaborations like this, we’re embracing the future while staying true to our roots.”
