Nestled on the rooftop of Vancouver’s newest 5-Star boutique hotel and the sole member of the Leading Hotels of the World in Western Canada, Lavantine will operate daily from 4 p.m. to 11 p.m., offering an open-concept kitchen, chef’s table, and Skybar, all against the stunning backdrop of the city skyline, ocean, and mountains.

The Lavantine menu, crafted by AZUR Chefs Shyam Longani and Daniel Kenney, celebrates the flavors of the Levant region and locally sourced ingredients from the Pacific Northwest. Dishes like Watermelon Salad with whipped feta and Mezze Platter with baba ganoush and hummus offer a tantalizing start, while savory options like Kofta Kebab and Short Rib Tagine promise a delightful journey for the palate. The dining experience concludes with decadent desserts like Baklava and Pistachio Gelato.
The Skybar, curated by AZUR Bar Manager Serhii Kulikov, presents a list of classic and contemporary cocktails alongside fine wines and craft beers from BC’s burgeoning brewing community. Kulikov’s cocktail creations pay homage to Arabian folklore, with drinks inspired by legendary voyages and timeless tales like Aladdin and the Magic Lamp, blending Mediterranean flavors and exotic spices.
