The Cinq à Sept Feature Menu
Take a deliberate pause and celebrate the in-between moments. The Cinq à Sept menu is an invitation to slow down, settle in, and let the evening unfold with intention.

Island Takeover: Wind Cries Mary x Ellipsis
Experience one of Vancouver Island’s most celebrated cocktail programs without ever leaving the city. The acclaimed team from Victoria’s Wind Cries Mary is taking over the Ellipsis bar for a high-energy guest shift.
- The Vibe: Coastal perspectives meet West Coast modernism. The guest team will be pouring signature Empress 1908 Gin-forward cocktails all night long.

The Ellipsis team is taking their talents on the road for the festival’s marquee event! This grand tasting brings together the city’s top bartending talent and global spirit brands for an unforgettable evening of high-level mixology.
- The Vibe: The Ellipsis crew will be stationed at both the Empress 1908 and Choya booths, shaking up signature cocktails that highlight their creative precision.

Soft Power Sunday (International Women’s Day)
Close out VCW in a sun-washed sanctuary of connection and recovery. To celebrate International Women’s Day, Ellipsis is hosting a women-led tropical brunch honoring leadership and culture in hospitality.
- The Vibe: Hosted in a female-owned and fully female-operated space, this event promises great energy, a live DJ setting relaxed tropical tones, and brilliant conversation.
