Fairmont Empress is delighted to announce the appointment of Isabel Chung as its new Executive Chef. Bringing over 20 years of culinary experience, Chef Chung now leads all creative and strategic culinary initiatives at the iconic hotel, joining an elite group of female chefs at Fairmont properties worldwide.
Chef Chung’s distinguished career began in 2001 at Delta Bow Valley in Calgary, Alberta, and has since spanned multiple prestigious Fairmont properties, including Fairmont Southampton, Fairmont Chateau Whistler, Fairmont Olympic Hotel in Seattle, and most recently, Fairmont Orchid in Hawaii. Her commitment to sustainability and passion for the Pacific Northwest’s vibrant culinary scene are at the heart of her cooking philosophy, which emphasizes authenticity and the natural flavors of the region.
In 2019, Chef Chung showcased her expertise in beekeeping at the Accor Headquarters in Paris, contributing to a pollinator initiative focused on environmental sustainability. She remains dedicated to incorporating eco-friendly practices into her work, ensuring a positive impact on the planet through her culinary endeavors.
“Sustainability is a core value in my approach. I always strive to incorporate sustainable practices to help create a healthier planet for future generations,” said Chef Chung. “Beyond that, I’m deeply passionate about mentoring new chefs. I’m excited to revive the culinary apprenticeship program at Fairmont Empress, guiding and inspiring the culinary leaders of tomorrow.”
Chef Chung’s culinary inspirations stem from her family heritage, where she learned cooking techniques from her parents. One of her signature dishes, sesame-sizzled steamed fish, reflects both her cultural roots and her passion for crafting dishes that evoke nostalgia and comfort.
As she joins the female-led food and beverage team at Fairmont Empress, Chef Chung aims to elevate Victoria’s dynamic culinary scene. She invites guests to experience Q at the Empress and Afternoon Tea in the Lobby Lounge under her leadership.
