Erin Hayes, a native of Chicago, boasts a career deeply rooted in the hospitality industry. Notably, she served as the bar manager at Lost Lake, a bar that earned critical acclaim, including Imbibe Magazine’s Bar of The Year (2015) and numerous James Beard Foundation Outstanding Bar Program Award nominations. Erin currently resides in Los Angeles and serves as the Beverage Director at the prestigious Fairmont Century Plaza Hotel.
Kelsey Ramage, with over 17 years of experience in the hospitality sector, is a multi-faceted expert in education, entrepreneurship, sommelier work, and bartending. As the director of the Trash Collective, she educates bartenders worldwide, both personally and in collaboration with Pernod Ricard, where she is a global sustainability ambassador. Before embarking on her personal projects, Kelsey was a lead bartender at London’s Dandelyan bar, which received accolades such as Best Bar Team, Best Menu, and World’s Best Bar.
